Oatmeal Peabutter Cookies:
- 2 cups quick cooking oats
- 1 1/4 cups flour
- 1 tsp. Baking powder
- 1 tsp. Baking soda
- 1/4 tsp. Salt (optional)
- 1 cup margarine or butter
- 1 cup Peabutter
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 tsp. Vanilla
- 1 cup chocolate chips (optional but tasty)
Oven 350 degrees F. Combine oats, flour, baking powder, baking soda and salt. Set aside. Beat margarine and peabutter until smooth. Add sugars and beat well.
Add eggs, one at a time and beat. Add vanilla. Blend in flour mixture and chocolate chips if using.
On an ungreased cookie sheet, drop dough by rounded teaspoonfuls about 2 inches apart, do not flatten.
Bake 9-12 min. until lightly browned. Remove from oven and allow to rest for about 5 min. for easier removal from cookie sheet. Cool on wire rack. Store in tightly covered container.
